Welcome

Welcome to my new blog!

I already posted a couple absolutely fabulous recipes. I hope you try them out, or at the least, drool over them and be inspired to be creative in the kitchen.

I decided to start this blog to keep track of favorite recipes Ive tried, and others that I plan to try. Inspired by my cousin Jenny and another blogger friend, Emilie.

happy days to you,
Jessica

gingery salmon

Ingredient list
  • 1 tablespoon rice vinegar
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon fresh thyme leaves
  • 4 tablespoons extra-virgin olive oil
  • kosher salt and pepper
  • 4 6-ounce salmon steaks (about 1 inch thick)
  • 2 medium red onions, cut into wedges
  • 3 peaches, cut into wedges
Directions
  • Heat grill to medium-high. In a small bowl, combine the vinegar, ginger, thyme, 3 tablespoons of the oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper; set aside.
  • Season the salmon with 1/2 teaspoon salt and 1/4 teaspoon pepper. In a large bowl, gently toss the onions, peaches, the remaining 1 tablespoon of oil, 1/2 teaspoon salt, and 1⁄4 teaspoon pepper.
  • Grill the salmon and the onions, until the salmon is opaque throughout and the onions are tender, 5 to 6 minutes per side. After flipping the salmon, place the peaches on the grill and cook until tender, 3 to 4 minutes per side. Drizzle the salmon with the vinaigrette and serve with the onions and peaches.
( I skip the rice vinegar because it has sugar)

COOK TIME 20 Min

Original recipe yield 3 dozen treats, depending on size

INGREDIENTS

  • 1 1/2 cups whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup rolled oats
  • 1/2 cups water, or as needed
  • 1/2 cup canola oil
  • 2 eggs
  • 3 tablespoons peanut butter
  • 2 tablespoons vanilla extract
  • a whole bunch of love

DIRECTIONS

  1. Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets.
  2. Mix together whole-wheat flour, all-purpose flour, cornmeal and oats. Make a well in the center of the dry ingredients and gradually pour in water, oil, eggs, peanut butter and vanilla. Mix well.
  3. On a flat surface use a rolling pin to roll out the dough. Cut the dough into dog biscuit shapes using a cookie cutter. Place the biscuits onto the prepared cookie sheet.
  4. Bake the cookies for 20 minutes. After the biscuits have cooked 20 minutes turn off the oven off but let the biscuits remain inside the oven for another 20 minutes to hardens.
feel free to use different fun cookie cutters and perhaps substitute the peanut butter for smushed up banana or veggies...anything you think your dog would like.
